Hilton works on expanding F&B horizons in India

Prashant Kulkarni, F&B Director, Hilton shares the brand’s plans to expand its F&B across India. He said, “F&B is a key story for the Hilton. As it happens, it’s even more poignant, when there is no travel happening, so city hotels especially are relying solely on food and beverage revenues.”

“We are planning quite a lot of things. We are actually in the process of creating a wedding story, a wedding playbook of sorts for India. We created a ‘wedding think tank’ during the lockdown and engaged with a lot of wedding influencers and planners and understood what the market is looking for when it comes to a destination wedding. We have created a group of champion hotels, we have also created a scene for collaboration between the hotels with each unit playing to their individual strengths,” Kulkarni added.

One of the interesting projects which he did was a partnership with writer Nolan Mascarenhas in their Goa property. “We started the third edition of the Poder Chronicles—our chef and the F&B team curated recipes around the breads from Goa. And we made very unique sandwiches out of it. And Mascarenhas is making a table top book, the proceeds of which will go to help local bakers fix their bakeries,” he said adding that the event caught the imagination of local Goans.
